鮭魚先去皮拔刺過之後
魚的皮肉之間,有一帶咖啡色的肉,裡頭含血量多一些
整隻鮭魚的部份切成生魚片後,剩下還沒切的部份如果要保存
這一帶有咖啡色的肉,經過冷凍顏色會深一點
有相關經驗的網友,你們會怎麼處理?
咖啡色的肉切下當碎肉?還是跟鮭魚肉的部份一起切下當生魚片?
