想請問現在或是有開過小火鍋店的前輩們,你們的湯頭都是自己煮或是用湯粉?
兩者的優缺點在哪邊呢 ? (一鍋200$左右)
因為打算開一間小火鍋店,想從書籍下去研究湯頭,請問有比較推薦的書籍嗎 ?
因為爬到的文大部分都是使用湯粉,可是這樣好像又缺少特色,想要用自己滾的
柴魚昆布高湯或是大骨湯下去當湯底,但是又怕成本太高,而且口味一多,要準
備的湯材又很雜,又或著是用湯粉當底之後看口味而定要加蔬菜或是柴魚下去滾
成不同口味的湯頭 ?
請問各位了解小火鍋的前輩們都是用哪一種方式 ?
不打算開太大間的,座位大約20人左右,一鍋平均約200$
