上個禮拜就知道今天店裡的訂單很滿,再加上每天固定配送的包月果汁,
果打汁前2天就開始思考要怎麼做才能讓作業流程更順暢,
讓每杯果汁和和每筆訂單都可以on time到客人身上。
為此我們提早1個小時到店裡打果汁,一整個早上都run得很好,
客人訂購的果汁也都在中午12點前順利送達,
(在此一提,中午12點到1點半是散客一窩蜂湧入的尖峰時段,
所以我們這段期間一定會空出來接散客)
正當中午12點多客人正多時,
原本預定下午2點半水果盒的客人來電請我們把水果盒馬上送過去,
雖然我們婉言解釋來不及,最快只能提早到2點,
但是客人還是非常堅持,要求我們"馬上"送過去!
我們當下決定關門暫停營業趕水果盒的訂單,
因此損失了中午的業績(可能還讓來店的客人不爽...)
水果盒送過去後不但被抱怨連連,
(後來才知道要馬上送到的原因是因為他家董事長和政府官員在吃飯,
怕吃完飯後沒有水果可以吃...@@),
還說因為客人沒預期中的多,所以要取消明、後天的訂單,
(由於這位客人的預訂的是高價水果盒,所以我們買了很多平常用不到的水果)
就這樣,我們前2天規劃的流程都被毀了,
中午一團亂,而且還沒做到散客的生意,
訂單被取消,而且還多花了買水果的錢。
只能說我們真的太沒經驗,第一次遇到這種事所以亂了手腳,
下次一定要堅持自己的立場,
要不就按照預定時間送,要不就取消訂單...
