想問餐飲同業,收店花多久時間? - 創業

我們店小小一間,碗盤約30組,

但每次收店,都要花上2-3小時的時間,
這樣算正常嗎?
自己檢討,碗盤、餐具(刀、叉、匙、筷)都還好,
最可怕的是各式各樣的鍋,平底鍋、湯鍋、炒鍋、飯鍋,
要除焦與油垢,除到後來,外鍋底就越洗越隨便了~
有鍋就有鍋鏟、湯瓢,但這都還好,我覺得花更多時間的是
一堆裝調味料、醬料、配料的小盒子等塑膠容器,可能是裝鬆餅漿、蕃茄醬、
或蛋沙拉、或裝配菜的容器等等...
然後還有各式各樣的飲料壺與飲料桶,2000cc的、5000cc的...
然後是咖啡機、鬆餅機、吧台的清潔,
還有廚房地板的沖洗、外場地板的掃地與拖地......
只有我跟老婆兩個人收,這都還沒談到門面的落地窗擦拭
(午晚空檔或沒客人時再來擦玻璃)、
門口南方松地板的清洗等等(一星期清理一次)......
不知道大家的店都幾個人收?要花多久時間?
有沒有小撇步呢?
